Coco Nut Balls

When you need a quick sugar fix, grab one of these delicious chocolaty and nutty balls. The best part? They're good for you too!


INGREDIENTS:

  • 1/2 cup peanuts, lightly seasoned or salted
  • 1/2 cup walnut pieces
  • 1 cup almonds 
  • 4 dried Turkish apricots
  • 3 dried Turkish figs
  • 1/4 cup orange juice 

INSTRUCTIONS:

  1. Place the peanuts walnuts, and almonds in a food processor and process it into a fine grind.
  2. Add the remaining ingredients into the food processor and process it until completely combined and no chunks of dried fruits remain, about one minute.
  3. Take the lid off and grab a small amount and squeeze it to test if it holds its shape. If it doesn't and it crumbles add a splash more of orange juice and process again.
  4. Dump the mixture onto a clean works surface, being careful not to injure yourself with the blade.
  5. Form into ping-pong size balls.
  6. Place in a sealed container and keep refrigerated.

Makes approximately 25 balls.
