Indian-Spiced Rice Casserole

Gently spiced and perfectly cooked rice paired with peas, corn and meat is an ideal weeknight meal.

 

Makes 4 servings.

Ingredients:

  • 1 1/2 cups aged basmati rice 
  • 3 cups hot water 
  • 2 teaspoons salt 
  • 1 teaspoon pepper 
  • 2 teaspoons turmeric 
  • 1 teaspoon cumin 
  • 1 teaspoon cardamom 
  • 1 cup corn 
  • 1 cup peas 
  • 1 cup chopped kale
  • 1 carrot, shredded 
  • 1 - 1 1/2 lbs chicken, cut into small cubes 

Instructions:

  1. Preheat the oven to 350°F.
  2. Lightly grease a casserole dish.
  3. Add the rice and hot water and stir to combine.
  4. Add the spices and stir to combine.
  5. Add and spread evenly the remaining ingredients, adding the meat last on top.
  6. Sprinkle over a bit of salt and pepper to taste.
  7. Cover and tightly seal the casserole dish with aluminum foil.
  8. Bake in the preheated 350°F oven for 45 to 50 minutes.
