
Gently spiced and perfectly cooked rice paired with peas, corn and meat is an ideal weeknight meal.
Makes 4 servings.
Ingredients:
- 1 1/2 cups aged basmati rice
- 3 cups hot water
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 teaspoons turmeric
- 1 teaspoon cumin
- 1 teaspoon cardamom
- 1 cup corn
- 1 cup peas
- 1 cup chopped kale
- 1 carrot, shredded
- 1 - 1 1/2 lbs chicken, cut into small cubes
Instructions:
- Preheat the oven to 350°F.
- Lightly grease a casserole dish.
- Add the rice and hot water and stir to combine.
- Add the spices and stir to combine.
- Add and spread evenly the remaining ingredients, adding the meat last on top.
- Sprinkle over a bit of salt and pepper to taste.
- Cover and tightly seal the casserole dish with aluminum foil.
- Bake in the preheated 350°F oven for 45 to 50 minutes.
