Sausage and Cabbage

A quick and easy meal that's big on flavour yet small on clean-up.

Ingredients:

  • 1/2 head green cabbage, thinly sliced 
  • 1 cup frozen kale or spinach
  • 3 potatoes, cut into 1-inch cubes 
  • 2 tablespoons tomato paste 
  • 1 teaspoon garlic powder 
  • 1 teaspoon salt 
  • 1/2 teaspoon smoked paprika 
  • 1 tablespoon canola oil 
  • 6 Italian-style sausages, mild or hot

Instructions:

  1. Preheat the oven to 375°F.
  2. Place the cabbage, kale and potatoes in a casserole dish.
  3. In a small bowl, mix together the tomato paste, garlic powder, salt, smoked paprika and oil. Pour over the vegetables and mix to combine until vegetables are evenly coated.
  4. Slice each sausage horizontally but not all the way through and open it up to butterfly the sausage and place casing-side up on top of the vegetables.
  5. Bake in a 375°F preheated oven for 45 minutes.
