
A quick and easy meal that's big on flavour yet small on clean-up.
Ingredients:
- 1/2 head green cabbage, thinly sliced
- 1 cup frozen kale or spinach
- 3 potatoes, cut into 1-inch cubes
- 2 tablespoons tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1 tablespoon canola oil
- 6 Italian-style sausages, mild or hot
Instructions:
- Preheat the oven to 375°F.
- Place the cabbage, kale and potatoes in a casserole dish.
- In a small bowl, mix together the tomato paste, garlic powder, salt, smoked paprika and oil. Pour over the vegetables and mix to combine until vegetables are evenly coated.
- Slice each sausage horizontally but not all the way through and open it up to butterfly the sausage and place casing-side up on top of the vegetables.
- Bake in a 375°F preheated oven for 45 minutes.
