Kaisers

This recipe makes soft dense kaisers delicious on their own or as a canvas for your sandwich masterpiece.


Makes 8 kaisers.


Ingredients:

  • 5 cups all purpose flour 
  • 2 tablespoons instant yeast 
  • 1 tablespoon sugar 
  • 1 tablespoon salt 
  • 1/4 cup canola oil 
  • 2 cups hot water 
  • 1 egg
  • 1/2 teaspoon molasses 
  • salt for kaisers topping 

 

Instructions:

  1. Combine the dry ingredients, but with just 4 cups of the flour, into large mixing bowl. Whisk with a fork to combine.
  2. Add the hot water and oil.
  3. Combine together using the paddle board attachment, or by hand using a firm spatula. Dough will be sticky.
  4. Add the remaining 1 cup of flour and combine again.
  5. Switch to the knead hook attachment and knead for 10 minutes until the dough is smooth. It may take longer if kneading by hand.
  6. Drizzle the dough with a bit of oil in the bowl until completely coated. Cover the bowl with a damp towel and let rise in a warm place for 1 hour.  A microwave is perfect for this by turning on for 1 minute while empty and then place the bowl of dough. Do not run the microwave while the dough is inside.
  7. Give a firm punch to the dough with your fist and take it out of the bowl.
  8. Divide the dough into 8 equal portions and form into a ball and flatten it a bit.
  9. Place on baking sheet. Cut an "X" with a knife on each kaiser about 1/4" deep. Let rise again for 1 hour.
  10. Whisk together the egg and molasses. Brush on each kaiser and sprinkle with salt.
  11. Bake in a preheated 400°F oven for 15 minutes.
