
Add this Creamy Polenta made dreamy with roasted garlic as a budget-friendly side dish to your next meal.
Ingredients:
- 1 whole garlic bulb
- 4 cups water
- 2 vegetable bouillon cubes (OR 4 cups broth in place of water and cubes)
- 1 cup fine cornmeal
- 1/3 cup Greek yogurt OR sour cream
- 1/4 cup pecorino cheese OR parmesan cheese
- 1 teaspoon ground thyme
- salt and pepper to taste
- 1/3 cup fresh chopped parsley
Instructions:
- Slice off the top 1/3 of the garlic bulb.
- Wrap tightly in foil and place in air fryer at 380°F for 20 minutes. (OR in an oven/toaster oven for 30 minutes or until soft).
- In a medium pot, add the water and cubes. Bring to a boil.
- Reduce heat to low and slowly whisk in the cornmeal. Keep whisking until combined and smooth. Cook for 15-20 minutes, stirring occasionally.
- Turn heat off. Add the yogurt, pecorino, thyme and roasted garlic. Stir to combine.
- Add salt and pepper if needed.
- Add the parsley and stir again OR garnish with the parsley instead.
