
These cookies are a refreshing change from the norm with the taste of lime and a subtle cornmeal texture.
Ingredients:
- 1/2 cup unsalted butter at room temperature
- 2/3 cup granulated sugar
- 1 egg
- 1 lime
- 1/2 cup cornmeal
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup icing sugar
Instructions:
- In a mixing bowl, cream together the butter and sugar.
- add the egg and lime zest and mix again.
- in a separate bowl, combine the cornmeal, flour, baking powder and salt.
- Add half of this flour mixture to the butter mixture and mix on low speed, then add the remaining half and mix again until incorporated.
- Place dough on a work surface and roll into a log approximately 1 foot long and 2 inches wide. Wrap in plastic wrap and place in the refrigerator for one hour.
- Cut log into 1/2 inch slices and place on parchment-lined baking sheet.
- bake in preheated 375° oven for 10 to 12 minutes.
- Prepare the lime glaze by adding the juice of a lime to 2/3 cup icing sugar. Whisk together until a glaze is formed and the sugar is dissolved. If too thick, add more lime juice.
- Let cookies cool completely on the baking sheet then drizzle the glaze over each cookie.
