Lime Cornmeal Cookies

These cookies are a refreshing change from the norm with the taste of lime and a subtle cornmeal texture.

Ingredients:

  • 1/2 cup unsalted butter at room temperature
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 lime
  • 1/2 cup cornmeal
  • 1 cup all purpose flour 
  • 1 teaspoon baking powder 
  • 1/2 teaspoon salt
  • 2/3 cup icing sugar


Instructions:

  1. In a mixing bowl, cream together the butter and sugar.
  2. add the egg and lime zest and mix again.
  3. in a separate bowl, combine the cornmeal, flour, baking powder and salt.
  4. Add half of this flour mixture to the butter mixture and mix on low speed, then add the remaining half and mix again until incorporated.
  5. Place dough on a work surface and roll into a log approximately 1 foot long and 2 inches wide. Wrap in plastic wrap and place in the refrigerator for one hour.
  6. Cut log into 1/2 inch slices and place on parchment-lined baking sheet.
  7. bake in preheated 375° oven for 10 to 12 minutes.
  8. Prepare the lime glaze by adding the juice of a lime to 2/3 cup icing sugar. Whisk together until a glaze is formed and the sugar is dissolved. If too thick, add more lime juice.
  9. Let cookies cool completely on the baking sheet then drizzle the glaze over each cookie.
