Raisin Oatmeal Balls

Bet you can't eat just one! These bite-sized snacks are the best of both worlds, satisfying your sweet tooth with a healthy conscience.

 

Ingredients:

  • 1 cup all purpose flour 
  • 3/4 cup granulated sugar 
  • 1/4 cup brown sugar 
  • 1/2 teaspoon baking soda 
  • 1 tsp salt
  • 1/2 teaspoon cinnamon 
  • 1 pinch nutmeg 
  • 1 teaspoon vanilla extract 
  • 1 egg
  • 1/2 cup melted butter 
  • 2 cups quick cook oats, large flakes 
  • 1 1/2 cups golden seedless raisins 
  • 1 cup dark chocolate chips 
  • 1 1/2 cups walnut pieces


Instructions:

  1. In a large bowl, add the first seven dry ingredients and mix to combine.
  2. Whisk the egg and vanilla in a small bowl. Make a well in the centre and add the egg and vanilla. Whisk again while slowly adding the melted butter. Then mix until all bowl contents are combined and smooth.
  3. Add the remaining ingredients and mix until thoroughly combined and evenly distributed.
  4. Line an 8" x 8" cake pan with parchment paper ensuring the paper go up the sides and over the rim a little for easy lifting when baked. Add the dough and spread evenly and press down firmly.
  5. Bake in a 350° preheated oven for 30 minutes. Let cool and slice into bars or form the bars into balls if crumbly.
  6. Store in food container and keep refrigerated.
