
Bet you can't eat just one! These bite-sized snacks are the best of both worlds, satisfying your sweet tooth with a healthy conscience.
Ingredients:
- 1 cup all purpose flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking soda
- 1 tsp salt
- 1/2 teaspoon cinnamon
- 1 pinch nutmeg
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 cup melted butter
- 2 cups quick cook oats, large flakes
- 1 1/2 cups golden seedless raisins
- 1 cup dark chocolate chips
- 1 1/2 cups walnut pieces
Instructions:
- In a large bowl, add the first seven dry ingredients and mix to combine.
- Whisk the egg and vanilla in a small bowl. Make a well in the centre and add the egg and vanilla. Whisk again while slowly adding the melted butter. Then mix until all bowl contents are combined and smooth.
- Add the remaining ingredients and mix until thoroughly combined and evenly distributed.
- Line an 8" x 8" cake pan with parchment paper ensuring the paper go up the sides and over the rim a little for easy lifting when baked. Add the dough and spread evenly and press down firmly.
- Bake in a 350° preheated oven for 30 minutes. Let cool and slice into bars or form the bars into balls if crumbly.
- Store in food container and keep refrigerated.
