Chocolate Brownies with Olive Oil

Irresistibly rich and moist chocolate brownies you'll fall in love with.

Ingredients:

  • 1 1/4 cup granulated sugar 
  • 3/4 cup all purpose flour 
  • 2/3 cup cocoa powder 
  • 1/2 cup icing sugar 
  • 1/2 cup dark chocolate chips 
  • 3/4 teaspoon salt 
  • 2 eggs
  • 1/2 cup extra virgin olive oil 
  • 2 tablespoons coffee 
  • 1/2 teaspoon vanilla 
  • 1 cup walnut pieces 

Instructions:

  1. Place parchment paper into an 8" x 8" cake pan up and over the sides for easy lifting after baking. Crumple up the paper into a ball and unfold if not cooperating. Spray with nonstick baking spray and set aside.
  2. In a medium bowl, sift together the flour, cocoa powder and icing sugar. Then add the granulated sugar, chocolate chips and salt. Stir to combine.
  3. In a large bowl, whisk the eggs. Then add the olive oil, coffee and vanilla. Whisk again to combine.
  4. Add the dry ingredients plus the walnuts and stir to combine.
  5. Place the mixture into the prepared pan and smooth it out.
  6. Bake at 325°F for 45 minutes.
  7. Let cool in the pan. When cooked, lift out and cut into desired size pieces.
